This keto friendly and gluten free blackberry cobbler is bursting with juicy berries and topped off with a simple buttery crumble.

PREP TIME ten mins

COOK TIME 20 mins

TOTAL TIME 30 mins

Ingredients

For the filling:

4 cups blackberries

One-quarter tsp xanthan gum

One-quarter cup monkfruit sweetener

1 tsp lemon juice

For the topping:

one cup almond flour

4 tbsp butter, softened

3 tbsp monkfruit sweetener

½ tsp cinnamon

Instructions

warmth up oven to 375 degrees.

Add the blackberries, xanthan gum, sweetener, and lemon juice to a bowl and stir good to coat the berries.

Place to a 12 inch cast iron skillet either 9x9 baking dish.

Add the almond flour, softened butter, sweetener, and cinnamon to a small bowl and stir good to form moist crumbs.

Sprinkle the topping over the berries.

Bake for 20 mins.

Let set for 5 mins before serving.
